Celebrating the Past and Helping with the Future

1906 mushrooms

Koko-Baz likes food.
Two recent projects took
us back in time.

The first was a historically
accurate meal duplicating
a 1906 dinner given in honor
of William M. Chase at the
Tilden Mansion in NYC.

The top dish is Bouchées of
Fresh Mushrooms à la Crème

The bottom is Baked Alaska,
invented in 1876 by
Chef Charles Ranhofer
of Delmonico’s Restaurant
in NYC in honor of the
U.S.’s purchase of Alaska.

The second dvd production was in support of
an endowment for the Edgar Allan Poe Cottage.
Located in the Bronx, NY, it was the final home
of one of America’s great literary figures.

It featured a
1846’s style dinner
with oyster pie and
a standing rib roast
with dandelion greens
and Yorkshire pudding

Koko-Baz is proud to have been involved with two productions
raising money for child victims of Hurricane Katrina.

The first, a benefit called 'The Kindness of Strangers'
featured live performances by Debby Boone, Marge Champion, Jason Daniely
and LeAnn Rimes, pictured above left, moving the crowd.

The second was library based disaster response initiative 'Katrina's Kids'
and featured some inspiring words by Leslie Uggams, pictured above right.
